The quicker and easier the better. I've never been able to get excited over food, although I will go to the likes of Tesco and quite happily shop away for nibbles, but thats more retail therapy. I like nibbles and not meals as such and would quite happily live on sandwiches.
I love beens on toast btw, or poached eggs on toast, with honey on toast as dessert....hmmmmm....malted granary bread of course.

This one's easy, good on cold nights, esp if lots of kids are around...... Can of chopped tomatos and large onion diced, throw them in a frying pan and let them ohh I forget the term,,,"steam off" "dry out",,,,,just stick the cooker on hot and stir periodically for 10 minutes until the tomatos have become less and the onion is cooked. Meanwhile, make a cheese sauce,,,,pint of milk,,,half a slab of cheese about 100g? Couple of spoons of flour and a pinch of nutmeg for flavour. Melt and whisk till it's smooth. Meanwhile, cook either broccoli or cauliflower until tender and some spaghetti,,,,,,then drain off and mix together. Voila,,,spaghetti a la broccoli/cauli,,,,or trees and worms as its affectionately known in our house. You could stick it in a casserole dish and sprinkle cheese on the top and call it casserole a la spaghettie a la broccoli, but it's a waste of time, really not worth the bother.

It would be better to sweat the onions down before adding the tomatos so that the full sweetness and flavor of the onion comes out.

It would be better to sweat the onions down before adding the tomatos so that the full sweetness and flavor of the onion comes out. But wouldn't the onions be overdone if they were sweated and then cooked for 10 minutes? I'm no onion expert and the taste of the onion is all-important in this recipe. But you kind of have to make sure the juice in the tomatoes is gone, and so I just bung them in together! So delicate!

If your reducing a can of chopped toms, that can be done seperately to cooking the onion. I would sweat the onion in a little olive oil, then add the toms and tomato puree to taste. You will also need to put the garlic in the tomatos to cook and basel. To sweeten use honey as sugar will not be the same. A dash of Wouster (spelling) sauce can also be useful.

King Prawns & Smoked Salmon on Rosti. Total cooking time about 20 mins. Serves however many you want - 1 rosti, a bit of smoked salmon and half a dozen or so prawns per person - ish. Make rosti and fry. Make a white wine sauce, add a handful of uncooked King Prawns. (3-5 mins)When cooked, remove prawns. PLace prawns on top of rosti with a slice of smoked salmon over the top. Drizzle sauce over salmon and to decorate the plate. Enjoy.
